Recently spent a couple hours with my Chapman friends brainstorming about degree programs that would integrate the arts into the social, economic, health, legal, political and religious realities of our world. An unexpected gift was a jar of Jim Doti's homemade fig preserves, which inspired this recipe.

Crispy Fig, Turkey and Havarti Quesadilla

Generously slather fig preserves onto a flour tortilla. Stack turkey and Havarti (or Brie or Swiss) on one side of the tortilla and fold the tortilla. Heat on a hot griddle (400 degrees) until crisp and cheese begins to melt.. Before serving garnish with arugula.
